Mango Sunrise Smoothie
"The dog days of summer." The hottest, longest, most humid days of the year are here in the tropics. You probably don't want to do much except lie around and try to stay cool. The last thing I want to do on these sweltering days is turn on the oven and bake dinner. And most of the time I can't stomach the thought of a heavy meal when the heat turns up outside. This smoothie will be on rotation at my house July through September!
Enter the Mango Sunrise Smoothie! It's the perfect meal when you don't even feel like turning on the stove. It's quick, refreshing, and easy to switch up the ingredients if you prefer something else. I use frozen fruit because it makes this smoothie almost like gelato. (Gelato for dinner? Yes please!) I also use coconut milk because it goes so well with the fruit. And the coconut flake gives it some added fiber to help you feel fuller longer. And finally, I included Vital Proteins Collagen Peptides for added protein but you can use your favorite unflavored protein powder.
This recipe will easily fill two bellies but if you want to share with more loved ones, it's a breeze to double it. And a couple added bonuses:
